Peru San Martin (Organic Criollo) – This sacred ceremonial cacao comes from the San Martin region of Peru, an area with the best climate and soil for cacao cultivation. Cacao trees grow happily in this magical land, surrounded by fertile mountains and stunning waterfalls. The cacao plants are hand-pruned to ensure healthy growth and are protected from insects and diseases naturally, without the use of pesticides or fertilizers.
The least amount of processing is used, the main goal being to leave the cocoa in its most natural state, retaining all the valuable nutrients and energy that cocoa has to offer. The beans are freshly picked, centrally fermented and dried. Fermentation takes place in staggered wooden boxes, and the boxes are moved from one box to another every two days.
The first tasting is very intimate, intimate and eloquent in its attunement. In the early days, this introduction happened spontaneously. Then I began to consciously follow this special manifestation. Now, with my complete devotion and the devoted attention of almost every cell of my body, I introduce myself and invite in the information that it wants to convey and that I am able to receive. I recognized this in this years ago.
